NH’s gastronomic offer gets together eleven Michelin Stars

At NH, we believe that our guests’ experiences would not be complete without a haute cuisine gastronomic offering. An offering that includes avant-garde approaches, that does not abandon tradition, cuisine with local and international influences, and, of course, great chefs that know how to express their passion for gastronomy, which is understood as a unique sensory experience.

We are fortunate to have each and every one of the chefs in our kitchens. But we are also proud of being able to have a group of professionals in our hotels that, between them, have exactly eleven Michelin Stars and represent the cutting-edge of international cuisine: Paco Roncero, Óscar Velasco, Chris Naylor… Do you want to get to know them a little more?

Paco Roncero is currently the Executive Chef and Director of the restaurant La Terraza del Casino, at NH Collection Casino de Madrid, as well as various restaurants in Madrid, Ibiza, Shanghai and Bogotá. He has won some of the most prestigious prizes in gastronomy, such as the 2005 Chef LÁvenir Award from the International Gastronomy Academy and the 2006 National Gastronomy Award from the Spanish Royal Academy of Gastronomy. He has two Michelin stars as well as three Guia Repsol suns.

In the kitchen of the Santceloni restaurant, managed by Hesperia Madrid, you will find Óscar Velasco, the restaurant’s chef of over a decade who has two Michelin stars and experience in three of the greatest restaurants in Spain: Zalacaín in Madrid; Martín Berastegui in the Basque Country, and Can Fabes in Catalonia. In 2006, he was given the Chef of the Future Award by the International Gastronomy Academy, and one year later he received the National Gastronomy Award.

Working at the helm of the prestigious Restaurant Vermeer in Amsterdam is the British chef Chris Naylor, decorated with one Michelin star. Vermeer is located in our NH Amsterdam Barbizon Palace hotel, in downtown Amsterdam, right next to the main train station and close to museums and shops. It is a gastronomic journey that also offers a wide selection of wines chosen by sommeliers Simon Veldman and Wesley Schipper.

One of the most recent incorporations to the Group’s gastronomic lineup is the Dutch chef Jacob Jan Boerma, who has 3 Michelin stars for his restaurant De Leest, located at the edge of the “de Veluwe” nature preserve. In 2003, the restaurant was awarded its first Michelin star, and received its second in 2013. In 2009, Boerma received the prestigious Chef of the Year Award from Gault Milau and soon after was awarded his third Michelin star. Now, this great chef will open his new restaurant at NH Collection Grand Hotel Krasnapolsky hotel at the beginning of 2016. He will also be in charge of creating select menus for different dining in the hotel, among them the Grand Café Krasnapolsky. 

From Amsterdam we travel to Madrid, where you can find DiverXO, the city’s only restaurant with 3 Michelin stars directed by chef David Muñoz and located at NH Collection Eurobuilding hotel. Muñoz was trained by working in restaurants such as Viridiana, Catamarón, and Chantarella as well as later working in Asian restaurants in London. When he returned to Spain in 2007 he opened DiverXO, a space characterized for bringing together various cuisines to produce a complex dining experience that is creative, unique, and full of subtle details featuring flavors from all corners of the world. He was awarded his first Michelin star in 2010,the second two years later, and in 2013, exactly one year after moving the restaurant to our NH Collection Eurobuilding hotel, he received his third.
