One of the favorite sentences of David Muñoz , chef of DiverXo, is: “Dying to take on the world and with many changes ahead of us”. Since he won his 3rd Michelin star last November, this has been somewhat of his motto.
Since this milestone event, the rumours of a potential move have been constant. David had been thinking about the idea of a new location for some time. His creative, restless and sometimes wild mind is always on the move. This announcement marks a step in the direction of the new DiverXO; or will it be the same DiverXO? It’s difficult to know because DiverXo is never the same. No day is quite like the one before.
David Muñoz is moving DiverXO alongside NH Hotel Group, specifically into the Hotel NH Collection Eurobuilding at Calle Padre Damián, 23 in Madrid, where he will continue to develop all these concepts of constant evolution and all-out creativity.
The new premises span almost 300m2 across a single room with a standalone street entrance. The refurbishment will begin soon and the restaurant shall be open for business at its new location by July.
We cannot give anything away just yet about the menu or room layout. To unveil the details, we will have to wait for the grand opening.
David’s entire team is moving with him. All that will change is the restaurant’s physical space, which will be bigger and filled with creative novelties. Nothing else will change.
DiverXO is DiverXO no matter where it is located. The alliance between NH Collection Eurobuilding and DiverXO is viewed as a collaboration agreement. “The restaurant was getting too small in terms of infrastructure, so we looked for options. We wanted to stay in Madrid. However, before we got the third star, nobody wanted to bet on us – except ‘NH Hotel Group“, David Muñoz said.

Haute cuisine is one of the cornerstones of NH Hotel Group’s value proposition. Our exclusive and prestigious gastronomic offering will be enriched and enhanced by this collaboration with David Muñoz.”
A three-star restaurant
This alliance brings the restaurant, which captured the limelight at the end of last year when the worldwide director of the Michelin Guide, Michael Ellis, and the sales head of Michelin Travel Partner Spain & Portugal, announced in Bilbao that David Muñoz’s restaurant had earned its third Michelin star, making him the first Madrid chef to achieve this accolade, under the NH umbrella.
